
Combine and set aside:

- 1 1/2 C Milk
- 4 tbsp Vinegar
- After 10 minutes add
- 2 L Eggs
- 2 tbsp Melted Butter
- 2 tsp Vanilla
- Meanwhile in a separate bowl:
- 2 C Flour
- 4 Tbsp Sugar
- 1 tsp Salt
- 2 tsp Baking powder
- 1 tsp Baking Soda
- Add Wet to Dry
- Mix until blended
- Set side 10 minutes
I use a large griddle. The heat is more even and works better than a frying pan for me.
The problems I encounter are:
- The pan gets too hot
- Pancakes get too dark
- Pan is right temperature but
- I don’t wait long enough, they are raw on the inside
- Second batch is tricky also
My pan is broken, so I’m not able to set the temperature exactly.
When someone else is indirectly involved in that process… knife and fork in hand, waiting with their elbows on the table throwing in already realized advice and/or worse advice that is based on wrong assumptions… I reacted rudely. Especially if the assumption is some general character flaw I’m being accused of, and this is being written down as an example of same – sorry about that meal recipient.
Add to all of this me trying to sort out other things in my life that I feel helpless about, that are simmering just below the surface… and it’s a volatile situation altogether.
I did that to my son, Nicholas. Pancakes were not what he was as “cooking” however, the poetic sense is needed here, and I’m sorry.
